After a big, filling meal, most of us crave dessert. That’s why you always have to prepare a sweet treat for your guests at a barbecue or party after the main course. But many of us don’t have the time to bake a delicious dessert dish from scratch. Don’t worry – you can cook one up with your grill!
Try these no-fuss dessert recipes next time you’re grilling:
Grilled pineapple with lime and vanilla
What you need:

1 whole pineapple, peeled, cored and cut lengthwise into eighths

1 vanilla bean, split open and scraped out the pulp

1 cup dark brown sugar

1/2 cup fresh lime juice

pinch of kosher salt

8 metal skewers
Combine vanilla bean (pod and pulp), dark brown sugar, lime juice, and kosher salt in a saucepan. Bring to a boil over medium-high heat, stirring constantly, until sugar has dissolved. Remove from the heat and let stand at room temperature for 2 hours. When ready, place in a sealable container and refrigerate until ready to use. Thread pineapple onto skewers, then brush evenly with prepared syrup. Cook on a preheated grill over high heat for 4 minutes per side or until tender. Serve with the remaining lime and vanilla syrup.
Grilled Strawberry Shortcake
What you need:

16 strawberries, peeled

1-pound cake, cut into 1/2-inch slices

1/2 lemon, grated

3/4 cup plus 3 tablespoons powdered sugar

1/2 cup cream
-
1/2 cup sour cream

1/4 cup fresh lemon juice

1/4 teaspoon vanilla extract

For the cream, whisk together the lemon zest, 3 tablespoons powdered sugar, heavy cream, and vanilla extract in a mixing bowl. Slowly add the sour cream and continue beating until the mixture has thickened. Pour the cream into a sealable container and chill in the refrigerator until ready to use. Mix the remaining powdered sugar and lemon juice in a bowl. Thread the strawberries onto metal skewers (4 in 1 skewers). Heat the cake slices on a preheated grill until grill marks appear, about 1 to 2 minutes, followed by the strawberries (3 minutes). Remove grilled strawberries from skewers and cut each half in half, then brush with sugar and lemon glaze. To serve, spread cream on 1 slice of cake, place 4 strawberry halves on top, top with another layer of cream and top with another slice of cake.
